I met Nats Rawline at a foodservice conference and tasted its no-bake desserts. A photo essay on raw cakes, ingredients, nutrition and what we can verify.
At a foodservice conference yesterday, I found a new way into dessert. I had heard of Belgian maker Nats Rawline for years, but “raw cakes” remained more of a phrase than an experience. This time I met Nathalie d’Harveng, the brand’s founder , in person and sampled the bites on offer. Their layers and textures made the idea tangible. No oven, yet very much a dessert: that was my small revelation. What is a raw dessert? In Nats Rawline’s range, it means plant-based cakes and treats assembled without baking , using ingredients such as dates, fruit, nuts, cacao or coconut milk depending on the recipe. A meeting that made the idea click On 1 October 2026, I tasted several little pieces at the conference. Some felt dense and layered, others softer, with toppings that changed the finish. I do not have a product card for each bite and cannot identify flavours or ingredients reliably from photographs. Nor am I reproducing a quotation from the person I met.
